Cordon Bleu inspired chicken

As I was browsing recipes today I came across one for Cordon Bleu. I have had this once in my life, and well, it was unforgetable. DELICIOUS. While I really wanted to make this recipe, I didn't have all the ingredients, so I improvised.

What you need:
Boneless, Skinless chicken breasts
sliced cooked ham
swiss cheese (I used american)
1 egg
bread crumbs
(I didn't use egg or breadcrumbs b/c I didn't have bread crumbs)

1. Preheat your oven to 400 degree F.
2. Pound the chicken with a meat tenderizer until 1/4 of an inch thick. Place ham and cheese on top of the chicken and roll up, insterting tooth picks to hold in place. (I added bacon to the outside of the chicken)
3. Cook for 30 mins or until chicken is done.

Easy Peasy.







I served it with broccoli and cauliflower and mashed potatoes, YUM!!

Mom, it's 4:30!

A few mornings ago I was awoken at 4:30 a.m. by Pumpkin singing a song. A thirty minute song. I layed there the whole time giggling to myself. I love that little girl. A few hours later while I was getting ready for the day, this is what she was doing:

Some change is going on around here

If you haven't notice, my blog is going through a few reconstructive procedures! I am working on this myself, so the finished profuct might take a while (I've got a lot on my plate, and so little time!) I have created a new background and am trying to figure out a few things. The header is up, I love it, but please tell me what you think!

With all these blog updates, taking care of Pumpkin, and dealing with everyday life...I did cook tonight! Very simple. Penne pasta with Red sauce and a nice green salad. I really enjoyed this meal. Of course I didn't snap a picture before I gobbled it up. But it was a sight! Wanna know the first thing out of Scot's mouth?
"WHERE IS THE MEAT?" I could have kicked him in the stomach!

Tater Tot Casserole and German Chocolate cake

Today was a very lazy day. Pumpkin and I woke up at 8:30 and had breakfast and then went back to bed to watch some DVRed shows. Of course she passed out immediately into a formula induce coma. I really enjoy laying around with her and spending special time with her.

After a few hours of laying around I decided that I would make Scot a cake. He's been wanting his favorite, German chocolate cake. While I am sure I could make it from scratch, I don't have the time! So a box recipe is just as good, only I add an extra kick towards the end.

German Chocolate Cake
1 box of Devils Food cake mix (and the ingredients called for on the back)
1 can of sweetened condensed milk
Coconut pecan frosting

The ingredients


Spray with cooking spray and flour your pans


Combine water, eggs, oil, and cake mix and mix with beaters



Pour into baking pans and put into oven


30 minutes later........


Cool for 30 mins! DON'T TOUCH!!
Very carefully place a plate over the cake pan and flip over allowing cake to come out. If you floured your pans this should be very easy. Take a good knife and cut across the top of the cake making it level. Disgard the top (or eat it, whatever floats your boat!).

Next you want to poke holes into the bottom layer. You can use the handle of a wooden spoon. Poke to your little hearts desire. Then pour the some of the sweetened condensed milk over the top of the bottom layer. Very easily spread it around.

Do the same to the top layed, except DO NOT LEVEL THE TOP!


Let this set for 30 mins before frosting. You want the milk to get soaked into the cake, BELIEVE ME IT'S WORTH IT!
30 minutes later.....


Frost that cake!!! And enjoy every last bit of it! But as a warning, it is very rich, so a little piece goes a long way...unless your Scot hah ;)

Now onto the daily dinner. It's an oldie, your mom might have made this for you as a kid. And the Duggars recently made it popular.
The Tater Tot Casserole. Yes, I made a tater tot casserole. And it was delicious! The only mistake I made is accidently thawing breakfast sausage instead of ground beef. The outcome, HEAVEN IN MY MOUTH!! Seriously, try it.

Tater Tot Casserole
2 lbs ground beef
1 (10oz) can condensed cream of mushroom soup
1 cup sour cream
2 cups shredded cheese
1 (32oz) pkg frozen tater tots

1. Preheat oven to 350 degrees F. Spray a 9x13 pan with cooking spray.
2. Brown ground beef and season with salt and pepper while browning. Drain.
3. Spread ground beef in prepared baking dish. Whisk together soup and sour cream. Spread over ground beef in an even layer.
4. Sprinkle 1 cup of cheese over soup layer.
5. Top with tater tots.
6. Bake 30 minutes. Sprinkle remaining cheese on top and bake another 10-15 minutes until cheese is melted

Oh how I love Chicken Tortilla soup

You have NO idea. My first incounter with it was years and years ago at Pancho's...yes Pancho's. It wasn't good by any means. Then a few years ago I came across a slow cooker recipe for Chicken Tortilla soup. I tried it out and fell in love. When Scot and I met I made it for him, and he was hooked instantly. The only problem is that it takes 6 hours to make!

A few months ago my friend invited me over for dinner. What had she made? That's right.. Chicken tortilla soup! In a pot...WHOA! I had to have the recipe. I forgot to ask for it, so a few days ago I did a little researching on my favorite cooking website, http://www.allrecipes.com/ and found an easy recipe. So here it is! (with a few pictures. I apologize I got side tracked by a crying, teething, cranky baby!)

Chicken Tortilla Soup
1 fully cooked and ready Rotisserie Chicken (found at your local grocery store!)
1 (32 oz) can of chicken broth
1 can whole kernel corn, drained
1 can diced tomatoes, drained (I used rotel with the chiles, delish!)
cumin, garlic, chile powder, salt and pepper (season to your taste)

1. Pull chicken off of bone and shred into pieces. Set aside.


2. In lg. pot bring add broth, corn, tomatoes and chicken. Add seasonings to taste.

3. Bring to a boil, then turn to med-lo and simmer for 30 mins.

I serve it with lime, sour cream, and tortilla chips...YUM.





ok this is where I got distracted! It turned into bath time and once it was time to finish the meal, I completely forgot to take a picture. And once I finished and it was time to eat, I almost didn't get a picture of the finished project!

A nearly empty bowl...Haha! That's how good it is!

I am a terrible blogger!

And I apologize. Until you become a mom, you really don't realize how hard it is to get things done! Somedays I feel like I am constantly playing catch-up!

As for the 7 meals a week, I did infact cook last night. And completely forgot to take pictures. It was a really simple dinner; Bacon Cheese Burgers with creamy cheesy rice and pork and beans...Yes it was a 5 star meal!

I am lucky if I get to eat a warm meal (it seems like Pumpkin knows everytime I'm about to sit down and enjoy myself) so I enjoy EASY cooking. Last night was exactly that. Frozen patties, fresh veggies, and a bun. Absolutely classic. And tastey...I really enjoy a good burger!

Tonight, on the other hand, I did not cook. GASP! Wait...I did PREPARE a meal though. I put some left over stew in a bowl and popped it in the microwave and constructed a smoked turkey wrap. It was a very simple fast meal, and I enjoyed every bit of it.

The reason for the fast meal? I was sewing something very special for my baby girl. Yesterday I made her an adorable pillowcase dress.

So this morning I decided that I needed to make matching bloomers. An absolute must! And so it took me 2 hours of getting up and down to reinsert paci to finish the bloomers. I am please, but wish I would have added ruffles! Oh well, next time!

Today was such a nice day out, even with all the threatening rain clouds. Since I have been in a sewing mood, I decided I needed to search for vintage pillowcases to turn into cute dresses. I suggested a trip to the Goodwill and thrift store and Scot agreed. I found several cute pillowcases and a baby book Pumpkin should really enjoy.

I love days like this!
