Tater Tot Casserole and German Chocolate cake

Today was a very lazy day. Pumpkin and I woke up at 8:30 and had breakfast and then went back to bed to watch some DVRed shows. Of course she passed out immediately into a formula induce coma. I really enjoy laying around with her and spending special time with her.

After a few hours of laying around I decided that I would make Scot a cake. He's been wanting his favorite, German chocolate cake. While I am sure I could make it from scratch, I don't have the time! So a box recipe is just as good, only I add an extra kick towards the end.

German Chocolate Cake
1 box of Devils Food cake mix (and the ingredients called for on the back)
1 can of sweetened condensed milk
Coconut pecan frosting

The ingredients


Spray with cooking spray and flour your pans


Combine water, eggs, oil, and cake mix and mix with beaters



Pour into baking pans and put into oven


30 minutes later........


Cool for 30 mins! DON'T TOUCH!!
Very carefully place a plate over the cake pan and flip over allowing cake to come out. If you floured your pans this should be very easy. Take a good knife and cut across the top of the cake making it level. Disgard the top (or eat it, whatever floats your boat!).

Next you want to poke holes into the bottom layer. You can use the handle of a wooden spoon. Poke to your little hearts desire. Then pour the some of the sweetened condensed milk over the top of the bottom layer. Very easily spread it around.

Do the same to the top layed, except DO NOT LEVEL THE TOP!


Let this set for 30 mins before frosting. You want the milk to get soaked into the cake, BELIEVE ME IT'S WORTH IT!
30 minutes later.....


Frost that cake!!! And enjoy every last bit of it! But as a warning, it is very rich, so a little piece goes a long way...unless your Scot hah ;)

Now onto the daily dinner. It's an oldie, your mom might have made this for you as a kid. And the Duggars recently made it popular.
The Tater Tot Casserole. Yes, I made a tater tot casserole. And it was delicious! The only mistake I made is accidently thawing breakfast sausage instead of ground beef. The outcome, HEAVEN IN MY MOUTH!! Seriously, try it.

Tater Tot Casserole
2 lbs ground beef
1 (10oz) can condensed cream of mushroom soup
1 cup sour cream
2 cups shredded cheese
1 (32oz) pkg frozen tater tots

1. Preheat oven to 350 degrees F. Spray a 9x13 pan with cooking spray.
2. Brown ground beef and season with salt and pepper while browning. Drain.
3. Spread ground beef in prepared baking dish. Whisk together soup and sour cream. Spread over ground beef in an even layer.
4. Sprinkle 1 cup of cheese over soup layer.
5. Top with tater tots.
6. Bake 30 minutes. Sprinkle remaining cheese on top and bake another 10-15 minutes until cheese is melted
